I was reluctant to make a cheese with chillies as I’m not a fan of them and had never used them in cooking but meeting Phil and Kay who are passionate about growing chillies changed my mind. The first batch we made all rubber gloved with fumes emanating while we used the processor convinced me I was not doing anymore.
3 months later came tasting day and wow first the taste of cheese, then this tingling heat hits the back of the throat – I need another piece! Needless to say that first batch sold out quickly – we are now looking to make batch no. 6.
First and foremost working with other local businesses increases sales to both parties. Transport of product is done on low miles. Freshness of product is vital and advice on storage and handling is given. Customers love the fact that we are using a locally grown product to make another local product.
