Spicy Clove Mustard



Great with barbecue dishes and sausages, this one's a little different. We may be bringing out a mustard in 2012.  We are just experimenting with flavours.

Ingredients : Spicy Clove Mustard
  • 100g White Mustard Seeds
  • 100g Brown Sugar
  • 1 teaspoon SeaSalt
  • 1 teaspoon Dried Chilli Flakes (medium heat)
  • 1 teaspoon Peppercorns
  • Half a teaspoon dryed Thyme
  • 2 Cloves (minced using mortar & pestle)
  • 1 teaspoon Turmeric
  • 200ml  Malt Vinegar (can also use Apple Cider Vinegar)

Really simple to make!

1) Add all the ingredients to a blender and 50ml of the vinegar and blitz for 20 seconds
2) Add the remaining vinegar 50ml at a time and blitz each time for 5-10 seconds on a lower setting if possible.
3) The ideal consistency resembles a coarse, thick paste.
4) Leave for 20 minutes and then spoon into small sterilized jars (110g) and seal.

Store in the fridge until ready to use.

** We've also made this using some Real Ale. Use about 50ml of a good dark ale. Reduce the Vinegar by 50ml.
