Plum, Cherry & Chilli Relish

A great fruity relish which is super with duck or alternative veggie kebabs! 

Plum, Cherry & Chilli Relish

Ingredients : 
  • 400g Plums
  • 2 Shallots 
  • 200g Cherries
  • 75ml Red wine Vinegar
  • 100g Brown Sugar
  • 20ml Rapeseed Oil
  • 2 Cloves
  • 1 Bay Leaf
  • 3 Mild / Medium Heat Chillies  (Serrano or Jalapeno's are fine)
To make 

1) Chop the Shallots and chillies
2) Destone the plums and cherries, then chop the flesh.
3) In a pan, cook the shallots in the Rapeseed oil until soft.
4) Add the plums, cherries and chillies, aswell as the vinegar and the bayleaf.
5) Put the cloves in a muslin (spice bag) and add to the pan
6) Add the sugar then bring the mixture to a boil. 
7) Simmer for another 15-20 minutes until the relish has thickened.
8) Remove the bayleaf and pour into sterilized jars. Cover & Seal.

* As a variation, try adding 50ml Pale Sherry to the pan.   


A note on Sterilizing : 

It is essential to sterilize jars and bottles to destroy any bacteria or micro-organisms that might be lurking inside.
Firstly check bottles/jars for cracks and then wash in hot, soapy water and turn upside down to drain.

There are various ways of sterilizing which include 
  • Oven - Stand containers on baking sheet and rest lids on top. Heat oven to 225f and bake for 30 minutes
  • Dishwasher - Put the containers and lids in a dishwasher and run a cycle on the hottest setting + dry cycle.
  • Sterilizing tablet - Dissolve a tablet in a bowl of water and leave to soak. We wouldn't really recommend this method for delicate flavours.
  • Boiling Water - Place your bottles/jars in a deep pan, open end upwards. Pour hot water over the jars and boil for about 10 minutes. Carefully remove jars and drain upside down on kitchen roll. Immerse lids in water and boil for 1 minute.
