Chilli Mayonnaise

A great home made recipe for mayonnaise. The chilli gives a subtle twist. Brilliant for salads or add a dollop with meats or kebabs. 

Chilli Mayonnaise

Ingredients : 

  • 2 Large Eggs (free range of course)
  • 1 tsp Dijon Mustard  (or our chilli mustard as per previous recipe!)
  • 300ml Sunflower, Olive or Rapeseed Oil
  • Lemon Juice
  • 1 tsp Sea Salt
  • 1 tsp Black Pepper
  • 1 Scotch Bonnet Chilli

To make : 

You can hand whisk everything as the pic above, but it is much easier to use a blender!

1) Chop the chilli and add to 25ml of lemon juice and infuse for 1 hour. We recommend using Scotch Bonnet Chillies for this recipe as they have a great fruity flavour and infuse quickly in the lemon juice
2) Grind the peppercorns and salt in a pestle & mortar
3) Break the eggs into a blender and add the mustard
4) Add the oil, a drop at a time with the blender running.  Don't feel the need to put all the oil in at once, otherwise it will not emulsify (thicken) correctly.  As it starts to thicken you can add the last of the oil as a trickle. 
5) When all the oil has been mixed, add the lemon juice, black pepper and salt and then blend for another 30 seconds.
6) Spoon into a bowl and refridgerate until you are ready to use.


Variation : 

If you want, you can make a herb mayonnaise by adding 1 tablespoon of chopped Parsley, Tarragon and Chives.
