Red Hot Pickled Onions

One of our most popular requests, so here is the recipe. Dead easy to make. Brilliant with some cheddar cheese on some crusty bread (with a pint of real ale!)

Ingredients : 
  • 2kg Pickling Onions
  • 50g Pickling Spice
  • 1.5 litres Malt Vinegar
  • 6 Fresh Dorset Naga Pods - you can use any hot variety but Dorset Naga's are our favourite and give the onions a real kick!     **Alternatively use 4 tablespoons of Dried Chilli Flakes (the hotter, the better)
  • 20g Peppercorns

To make (really easy)

1) Peel the onions (very boring job, sorry) and then tip them into a preserving pan.
2) Dice the chillies and add to the pan. You can leave the seeds in for this recipe
3) Add the malt vinegar, pickling spice and peppercorns then bring the pan to the boil. 
4) Add the pickling spice and simmer for 20 minutes
5) Drain the pan through a metal sieve with the vinegar being retained in a jug.
6).Pack the onions into warm, sterilised jars.
7) Pour over the hot vinegar right to the top of each jar covering the onions. 
8) Seal the jars with metal lids and leave for at least 6 weeks before eating.
