Dragon Soup

Ok, well it doesn't contain dragons, but this is one fire breathing soup, great for all chilli enthusiasts out there!   Serve with chunky bread.  Perfect on a day like today. Freezing cold and heavy rain.

*We make it with Habanero chillies which have a pretty decent kick but not overpowering. You can adjust the heat by using different chillies depending on your preference.

Ingredients : Dragon Soup
  • 6 red peppers
  • 1 large onion
  • 1/2 tablespoon brown sugar
  • 1 clove of garlic
  • 1 teaspoon ground coriander
  • 50g butter
  • 2 large tomatoes
  • 1 litre vegetable stock
  • 4 Habanero Chillies*
  • 1 lime
  • 1/2 teaspoon seasalt
  • black pepper

To make  : 

1) Under a hot grill, heat the bell peppers until the skin starts to blister.  Cool and peel off the skin.  Deseed and dice.
2) Peel and chop the onion.  
3) Peel and dice the garlic
4) Chop the tomatoes roughly.
4) Wearing gloves, dice the Habanero chillies finely and deseed.
5) In a large pan, add the peppers, onion, garlic, brown sugar and chillies.  Cover and cook on a low heat for about 15 minutes until soft.  
6) Stir in the tomatoes, coriander and the vegetable stock and cook for another 5 minutes stirring regularly.
7) Remove from heat and add contents of pan to a blender. Blitz for 20 seconds until smooth consistency.
8) Tip the contents back into the pan and bring to the boil.   Stir in the juice and zest of the lime. Add 2 turns of black pepper grinder and seasalt and stir. 
9) Serve immediately.
