Spicy Plum Butter



This recipe has a deep red colour and a delicious tangy flavour. Perfect on pancakes or used as a filling or topping for cakes.  We use it as a spicy topping for teacakes or lardy cake. The chilli gives it a warming twist.

Plum Butter


Ingredients : 
  • 1kg red plums
  • 1 orange
  • 500g sugar
  • 150ml water
  • 1 birdseye chilli pod


To prepare :

1) Destone the plums and dice the chilli.
2) Remove the zest of the orange and squeeze out the juice.  Dice the rind.
3) Place the plums, zest, rind,chilli and orange juice into a large pan and add the water.
4) Bring to the boil and then cover with a lid and cook for 30 minutes until the plums are very soft. Allow to cool
5) Press the contents through a fine sieve.  Measure the puree into a pan and then add 350g sugar for every 600ml of puree. 
6) Gently heat, stirring regularly.
7) When the sugar has dissolved, increase the heat and boil for another 10 minutes until the mixture thickens. Stir regularly during this time to stop it sticking to the pan.
8) Spoon into warmed sterilised jars. Seal and label.  Store in a cool, dark place for at least 7 days before eating.
