Chilli Toasties

An ever popular snack at the nursery and so simple to make, these toasties are crunchy with a spicy flavour.   It is sort of a home made modified cheese on toast crossed with an omelette!  So simple to make, even Phil can do them.

Ingredients  (serves 2)

  • 2 free range eggs
  • 150ml milk
  • 1 fresh red or green chilli (heat depending to your taste. We usually use Jalapenos or Habaneros depending on Phil's mood!)
  • 50ml grated cheddar
  • 1 tablespoon chopped fresh coriander
  • 2 slices bread
  • Rapeseed oil (for frying)
  • Twist of black pepper
  • Twist of seasalt

To prepare   (so simple!)

1) Grate the cheese. We use cheddar but mozzarella is fine.
2) Finely chop the chilles and coriander.
3) Break the eggs into a medium bowl and whisk.  Add the milk and whisk again. Add the chillies, coriander, grated cheese and a twist of seasalt and black pepper
4) Cut the bread diagonally in half and soak them in a the egg mixture.
5) Heat a frying pan with a little rapeseed oil and then fry the soaked bread over a medium heat, turning them occasionally until they are a golden brown.
6) Drain on any excess oil with a piece of kitchen towel and serve immediately with a dash of chipotle sauce (optional)

Lots of variations/modifications. This recipe is for plain chilli toasties but you can add finely diced onions and tomatoes to the mix.
