Garlic, Chilli & Red Wine Vinegar

Simple to make but really tasty!  Use it drizzled over salads or pasta to add an extra zing to your meals.

Ingredients : chilli vinegar
  • 4 garlic cloves
  • 1 Scotch Bonnet or Habanero Chilli
  • 250ml  red wine vinegar
  • 1/2 tsp Black peppercorns
(see, we told you it was simple! - makes 1 large bottle of vinegar)

To prepare:

1) Peel the garlic and crush using a pestle and mortar. Add the peppercorns and crush together. 
2) Finely dice the chilli.  You can leave the seeds in or remove if you wish. Remember to always wear gloves when cutting up raw chillies.
3) Heat the vinegar in a saucepan until it starts to boil. Add the garlic, peppercorns and chillies and simmer for 15 minutes. 
4) Remove from heat, then pour the vinegar though a sieve and back into the bottle.
5) Seal and then allow to cool. 

*For a sweeter recipe, add 50g of caster sugar at the simmering stage.
