Ancho is a Mexican chilli pepper that is also known as Poblano and Pasilla. Ancho Grande is a large triangular shaped pungent thin walled chilli pepper that is 12cm in length by 6cm wide. The peppers start off very dark, near black-green and mature to a vibrant red. Ancho Grande is mildly hot and is ideal for using fresh when green or drying when red and fully mature. If the fruits are used when red at full maturity they retain the name Ancho, but if the fruit is still dark green-brown when used they are called Mulato and when the fruits are dried they are called Poblano.
