Tomato & Chilli Chutney

A really easy recipe which makes a chutney which is perfect with almost every dish!  It is so simple to make, that even Phil can do this one!

Ingredients : 
  • 3kg Tomatoes
  • 4 Onions
  • 300ml Malt vinegar   (White wine vinegar is a good alternative)
  • 300g Granulated Sugar
  • 3 Fresh chillies (medium heat - We recommend Cayenne chillies for this chutney)
  • Salt
  • 1 tsp Italian Seasoning spices

To make : 

1) Chop the tomatoes and add to saucepan
2) Chop and peel the onions and add to pan
3) Dice the chillies and add to pan
4) Cook gently and simmer for 20 minutes until tender
5) Add the vinegar, spices and sugar and then simmer for another 40 minutes until the sugar has dissolved and the mixture starts to thicken
6) When it has reached the correct consistency, pour into sterilised jars and seal.

We find it best to leave it for at least 2 weeks before eating. This gives the flavours time to mature.
