Simple Thai Chilli Sauce

This is a simple to make recipe for a Thai inspired chilli sauce using traditional ingredients such as Lemongrass, Limes and Rice Vinegar.   Super with spring rolls. We've been told it is also fantastic with lamb.

Ingredients  :Thai Chilli Sauce
  • 125ml Rice Vinegar
  • 200g Granulated Sugar
  • 125ml Water
  • 5 Birdseye Chillies
  • 3 Garlic Cloves
  • 1 Lemongrass stalk
  • Fresh ginger
  • 1 tablespoon Lime Juice
  • 1/2 tsp Paprika
  • Fresh Coriander

1) Crush the garlic cloves
2) Dice the chillies. Chop the Coriander
3) Crush and chop the ginger. A thumbful is fine.
4) To a pan, add all the ingredients except the lime juice and bring to the boil.
5) Add the sugar and simmer for 40 minutes until the mixture starts to thicken.
6) Stir in the lime juice.
7) Pour into warm, sterilized bottles and seal.

Variations - If you want a smoother sauce, pour the contents of the pan into a blender and blitz for 10-20 seconds before bottling.  If you want a thicker sauce,  combine 1 tsp flour with a little water and add to pan.
