Spicy Cashew Stir Fry

A massive favourite in our household. A great combination of soft, sweet peppers and chewy cashew nuts. A great recipe for cold winter days!

Ingredients :   (serves 2)
  • 2 Red Peppers
  • 2 tablespoons Rapeseed Oil
  • 1 Birdseye chilli
  • 1 tablespoon Cornflour
  • 1 tablespoon Soy Sauce
  • 1/2 tablespoon Brown Sugar
  • 100g Cashew Nuts
  • 300ml Water
  • 1/2 teaspoon Sea Salt
Easy to make ..

1) Chop up the peppers and deseed. 
2) Chop up the chilli and deseed
3) Heat the oil in a wok or saucepan and add the chilli. Cook for about 30 seconds in the hot oil.
4) Add the peppers and cashew nuts and cook for about 5 minutes on a medium heat, stirring occasionally. 
5) Add the water and sugar and simmer for 10 minutes until the peppers are tender.
6) In a jug, blend the Soy Sauce and cornflour to form a paste
7) Stir into the pan until the mixture thickens.
8) Season with a little salt.

Serve immediately with boiled rice.
