Sweetcorn, Jalapeno & Pepper Relish

A super relish, easy to make and great with burgers and hotdogs!

Sweetcorn, Jalapeno & Pepper Relish

  • 2 Red Peppers
  • 1 Onion
  • 2 Red Jalapeno Chillies
  • 350g Sweetcorn
  • 2 Limes
  • Handful of fresh Coriander
  • 100ml water
  • 100g Brown Sugar
  • 1 tablespoon Rapeseed Oil
  • 1 tablespoon Cornflour
  • 1/2 tsp Seasalt
  • 1 bayleaf

To make 

1) Chop and de-seed the chillies and peppers. 
2) Peel and finely chop the onion
3) Finely chop the garlic
4) Chop the Coriander
5) Heat the oil in a pan and then add the chillies, peppers, onion and garlic and cook until softened on a low heat for about 10 minutes
6) Add the sweetcorn, sugar, water and juice of 2 limes. Bring to the boil stirring to dissolve the sugar and then simmer for another 10 minutes until the corn is tender.
7) In a jug mix the cornflour and a little water to form a fine paste and then add this mix to the saucepan, stirring constantly and bring to the boil.
8) Lastly stir in the coriander, bayleaf and salt and remove the pan from the heat.
9) Pour into warm, sterilized jars.
10) Store for 1 week before serving to allow the flavours time to mature.
