Blackberry Chilli Chutney

A summer favourite but a good way of using up all those blackberries in your freezer! 
Great with toast or with a strong cheese.  The chillies are not overpowering and just give it a nice twist.

Blackberry Chilli Chutney

Ingredients : 
  • 500g blackberries
  • 1 red onion
  • 1 small apple
  • 1 thumbsized piece ginger
  • 3 tablespoons caster sugar
  • 2 teaspoons red wine vinegar
  • 2 Jalapeno red chillies   **can be made with 1 heaped tablespoon of chilli flakes instead but fresh pods work better**

To make :

1) Heat the oil in a large saucepan. Peel and chop and onion and add to the pan.
2) Grate the ginger and dice the chillies (and deseed). Peel, decore and finely chop the apple. Add the ginger, chillies and apple to the pan.
3) Fry gently for 5-10 minutes until the mixture has softened
4) Add the blackberries and cook for another 5 minutes.
5) Add the sugar and vinegar and stir into the pan
6) Bring to the boil and then simmer for 15-20 minutes.  
7) Spoon into warm sterilised jars and seal.
8) Leave for around 10 days before using to allow flavours time to mature.
