Strawberry Chilli Fool

This is a great summer recipe. Perfect for enjoying outside on warm summer evenings.  The chilli adds a subtle twist and is balanced by the cream and yoghurt.
It was Phil who invented the chilli twist on this...  he has chilli on everything!
Other fruits can be used such as peaches or apricots.

Strawberry Chilli Fool

Not exactly fat free,can be made heathier by using less cream and more yoghurt   ("Where's the fun in that", Phil!)

Ingredients : 
  • 250g fresh ripe strawberries
  • 40g caster sugar
  • 200ml whipping cream
  • 150ml plain yoghurt.
  • 1/2 teaspoon chilli powder (medium heat)

To make :  (very simple!)

  1. Wash the strawberries, remove the stems and slice roughly. 
  2. Put into a large bowl and sprinkle with sugar.
  3. Whisk the cream until it stands in peaks with the end of the whisk. Fold in the chilli powder and stir in well.
  4. Pour the yoghurt over the strawberries and then using a fork, mash the strawberries into the yoghurt.
  5. Fold the whipped cream into the strawberry mix.  Taste and gently stir in a little more sugar if required.
  6. Serve into bowls and chill in the fridge before serving.
