Thai Sweet Chilli Sauce

We have lots of sauces that we supply but we don't do a Thai Sweet sauce at present.  The reason for this is that it is so easy to make and we encourage our customers to have a crack at making this one themselves!

Great with traditional oriental dishes such as vegetable spring rolls!  It has a sweet and spicy flavour.  

This recipe is suitable for vegetarians and does not contain the fish sauce which is found in many retail varieties.

Ingredients :     
  • 2 fresh Jalapeno or Cayenne chillies  
  • 2 garlic cloves
  • 1 teaspoon black peppercorns 
  • 50ml water
  • 100ml white wine vinegar
  • 200g sugar
  • 1 small piece of root ginger
  • 1 lemongrass stalk
  • 2 teaspoons lime juice

To prepare : 

1) Peel and crush the garlic.   Peel and slice the ginger. Crush the peppercorns.
2) Half the chillies and deseed and then finely dice.
3) To a pan add the sugar, water and cider vinegar and heat, stirring to dissolve the sugar.
4) Once it is boiling, remove from heat and add the cloves, peppercorns, ginger, lemongrass and chillies.
5) Return to heat and simmer for 10-15 minutes until thickening point is reached.  Stir regularly.
6) Remove from the heat and stir in the fresh lime juice.
7) Remove the lemongrass stalk and pour into warm, sterilised bottles. 
8) Cap and seal and then leave for 2 weeks in a dark place to give the flavour time to mature.

***For a smoother recipe, after point 6), remove the lemongrass stalk and pour the mixture into a blender and blend for 20-30 seconds.  

**Makes 1 large bottle**

Once bottles are opened, refridgerate.
