Spicy Plum & Cherry Relish

This is a delicious recipe which gives a great sweet and sour fruity flavour. Ideal with cold meats or with a strong cheese.  Also great when added to a sauce or gravy to add a zesty twist.

Makes about 500gplums and cherries

Ingredients : 
  • 500g ripe red plums
  • 500g ripe cherries
  • 2 red chillies (we recommend medium heat varieties such as Cayennes for this one)
  • 2 shallots
  • 1 tablespoon rapeseed oil
  • 80ml red wine vinegar
  • 20ml balsamic vinegar
  • 100g brown sugar
  • 1-2 leaves of garden mint
  • 1 tablespoon lemon juice
  • 30ml dry sherry **optional

To prepare 

1) Firstly, prepare the ingredients. Halve and destone the plums and cherries and then chop roughly.  
2) Halve and deseed the chillies and finely dice the flesh.
3) Peel and dice the shallots. Finely dice the garden mint
4) To a pan add the oil and then add the shallots and chillies.  Cook for about 5 minutes until soft.
5) Add the plums, cherries, vinegar, sherry (if you wish) & mint and then also stir in the sugar.
6) Bring the mixture to the boil stirring unil the sugar has dissolved.  Increase the heat and cook for 15 minutes stirring regularly to prevent it sticking.
7) Once setting point has been reached, stir in the lemon juice and then spoon into warmed, sterilised jars.  Cover and seal.  
8) Store in a dark cool place for 1 month before consuming to allow the flavours time to mature.

Variants on recipe - try it with peaches instead of cherries, or just with 1kg of ripe plums.   The sherry is optional.
