Herb & Lemon Chilli Vinegar



A very versatile fresh tasting vinegar, great for livening up a ploughmans.  
The chilli gives a little twist!

Don't go too hot with this one as the chilli will overpower the other ingredients.

Makes 1 x 250ml bottle

Ingredients : 

  • Zest of 1 lemon
  • 5 basil leaves
  • 10 chive stalks
  • 1 small red chilli (Jalapeno / Fresno)
  • 250ml white wine vinegar

To prepare

1) Peel the lemon using a potato peeler to remove the zest. Try not to get any of the pith (white layer) underneath
2) Wash and dry the basil leaves and then chop roughly.
3) Half the chilli and chop finely.  Remove the seeds
4) Cut the chive stalks in half (into 10cm long strips)
5) In a clean jar, add the zest, basil, chillies and chives.
6) Pour the vinegar into a saucepan, and heat until it starts to bubble around the edge of the pan.  
7) Allow to cool a little and then pour into the jar over the other ingredients.   

When completely cool, cover and store the jar in a dark cool place for at least 2 weeks to give the flavours time to mature.

Once open, refridgerate.  

We have done numerous experiments!  

You don't have to use basil or chive. Try it with rosemary, mint or oregano instead. Try changing the vinegar to red wine or balsamic for different flavours.
