Easy Chilli Jam
Cayenne chillies

This recipe is so simple and results in a delicious savoury jam which is great as a dip with proper chips or used with any cheese. 
There are many ways of making chilli jam.  We roast our red peppers for additional sweetness. 

Ingredients  :
  • 175g onions
  • 350g sweet red peppers
  • 2 large Cayenne chilli pods
  • 2 garlic cloves
  • 400ml cider vinegar
  • 400g sugar
  • 1 lemon

To prepare 

1) Firstly peel and dice the onions and garlic cloves.
2) Deseed and chop the peppers and chillies
3) Put the onions in a large pan, cover with water and cook for 5-10 minutes to soften them. Drain out the water.
4) Add the peppers, chillies, garlic and cider vinegar to the pan and simmer for 30 minutes until soft.
5) Stir in the sugar and continue to stir over a gentle heat until it has dissolved. 
6) Add the juice of 1 lemon  (you can also add zest & pith aswell), stir in thoroughly and then bring to the boil. Boil rapidly for 15 minutes, stirring regularly until setting point has been reached.
7) Pour into warmed, sterilised jars and seal. Leave for at least 2 weeks before eating to give the flavours time to mature.
